Wash and then pat dry brinjal. Make small cuts on
brinjal. Apply oil and sprinkle salt on top. Now roast properly from all sides.
Keep in a bowl with lid on it. Let rest for 15 minutes. Remove burnt skin
carefully & then finely chop.
Heat a kadhai and add Foodrite Onion Tomato Masala. Cook for 2 to 3 minutes. Add turmeric and cook for another minute. Now add water and let simmer. Add chopped brinjal. Adjust salt & let cook for few minutes. Adjust salt.
Finish with chopped coriander and serve hot with phulka, roti or plain paratha.
